White Bean Waffles
Wet Ingredients:
15 oz can white northern beans (or other white bean)
2 cups non-dairy milk (I use vanilla almond milk)
3 tbs vegetable oil (i use 3 T of unsweet applesauce)
2 tbs apple cider vinegar
3 tbs maple syrup
1 tsp vanilla extract
2 tbs ground flax seed
Dry Ingredients:
1/2 cup rice flour (i didn't use)
1 cup flour ( i used 1 1/2 of whole wheat flour)
1 tbs baking powder
1/2 tsp salt
Start heating the waffle iron. Puree the beans in a blender. Add the other wet ingredients, including the flax seed and blend. In a separate bowl, combine the dry ingredients. Add to the wet and blend or stir together. If the batter is too thin, or if it thins over time stir in a little more flour.
Cook according to you waffle iron's directions. I use butter flavor Pam to keep them from sticking. Also, I cook all of them, allow to cool, and freeze the extras. We toast these for quick meals.
Makes five 8-inch waffles.
