World's yummiest, quick chocolate heaven in a cup :) found this on www.vegsource.com
Wet Mix:
2 1/2 T water or strong coffee
2 T unsweetened applesauce
3 1/2 T packed brown sugar (regular sugar works too)
1/2 tsp lemon juice or cider vinegar
1/4 tsp pure vanilla extract
Dry Mix:
3 T whole wheat flour
1 T oat or barley flour (or just do 4 T of whole wheat)
2 T organic unsweetened cocoa powder
1/4 tsp baking soda
1 pinch salt
1 T organic vegan semisweet chips
Lightly spray two coffee mugs or ramekins. In small bowl whisk together the wet ingredients. In a smaller bowl, whisk together the dry ingredients. Mix dry ingredients into the wet. Divide batter evenly into the 2 mugs. Sprinkle 1/2 T chips over the batter. Microwave on high for 1 minute, 10 sec. (time depends on oven wattage. this is for a 1200 watt oven)
Let cool for 5 minutes.....if you can....then ENJOY!
TIPS:
- If you have no leftover coffee, you can add 1/2 tsp coffee or espresso powder to water.
- Freeze applesauce in ice cube trays and save in zipper bags. Each equals 2 T.
- For oat flour, just whiz rolled or quick oats in a dry blender.
